Full Time Course (16 months)
• International Hospitality Management Diploma
This course consists of four main components. Even though the course is management orientated it covers all aspects of the hospitality industry.
- Diploma in Food Preparation and Culinary arts
Safety ~ hygiene ~ security ~ customer care ~ costing, budgeting, control ~ menu planning ~ dietetics ~ basic food preparation methods ~ garnishing techniques ~ cold and hot food preparation
- Diploma in Food and Beverage Operations and Services
Safety ~ hygiene ~ security ~ personal skills and attributes ~ customer care ~ product knowledge ~ billing and checking ~ table ~ silver ~ counter service ~ table and drink service
- Diploma in Accommodation Operations and Services
Safety ~ security ~ customer care ~ personal skills ~ accommodation and housekeeping services ~ design ~ décor and furnishings ~ control in the accommodation environment
- Diploma in Reception Operations and Services
Safety ~ security ~ customer care ~ personal presentation ~ reception procedures ~ front office procedures ~ reservation procedures ~ guest accounting ~ selling and marketing techniques
1. The academic fee includes the following:
• All study material required for City & Guilds Modules
• Ingredients of all practical classes for purpose of food preparation and culinary arts;
• Examination costs, including ingredients of practical examinations;
• A first aid course;
• A preliminary wine course;
• 2 (TWO) chef’s jackets;
• Student registration fee with City & Guilds;
• A one year membership fee to the South African Chef’s Association;
• Accommodation;
• 2 (TWO) meals per day;
• HACCP course
2. The academic fee excludes the following:
• Knife set (has to comply with requirements set by the School);
• Books and stationery;
• Transport;
• Pocket money;
• Front office uniform;
• All other costs not included in clause 1. above.
